- Begin by heating a non-stick skillet over medium heat. Crack the eggs directly into the skillet, stirring continuously for about 3-4 minutes until they are just set and fluffy. If you’re adding cooked sausage or bacon and fresh vegetables, mix them in during the last minute of cooking. Season with salt and pepper.
- Take a large flour tortilla and lay it flat. Spoon the cooked egg mixture into the center, leaving space towards the edges. Sprinkle cheese atop the eggs, followed by salsa.
- Carefully lift one edge of the tortilla and fold it over the filling, creating pleats as you fold the opposite edges inwards to form a hexagonal shape. Avoid overstuffing.
- Return the wrap seam-side down into the skillet over medium heat. Cook for about 2 minutes until the bottom is golden brown. Flip and cook the other side for another 2 minutes.
- Remove the wrap from the skillet and let it rest for 30 seconds. Slice in half for easy handling, and enjoy your creation!
