Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice the chicken breasts into cutlets and season with garlic powder, chili powder, salt, and pepper.
  2. In a large skillet, heat olive oil over medium-high. Cook the chicken cutlets for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add more olive oil if necessary and sauté the chopped onion for about 5 minutes until soft.
  4. Stir in the Ro-tel, black beans, corn, and smoked paprika. Cook for 2 minutes, mixing well.
  5. Return the chicken to the skillet, layer the vegetables on top, and sprinkle with Mexican cheese blend.
  6. Transfer the skillet to the oven and bake for 5-7 minutes until chicken reaches 165°F and cheese is bubbly.
  7. Garnish with fresh cilantro and serve hot.
