- Begin by cleaning your mushrooms with a damp cloth to remove any dirt. Trim off the tough stems and slice the mushrooms into 1/4-inch strips.
- In a bowl, whisk together your marinade ingredients: soy sauce or tamari, apple cider vinegar, maple syrup, smoked paprika, garlic powder, onion powder, black pepper, and sesame oil.
- Add your sliced mushrooms to the bowl of marinade, tossing them gently to ensure each piece is well coated. Let them sit for 15-30 minutes.
- While marinating, preheat your air fryer to 250°F (120°C).
- Arrange the marinated mushrooms in a single layer in the air fryer basket. Cook for 30 minutes, flipping halfway through.
- Check your mushroom jerky for desired texture after 30 minutes. Cook longer if preferred.
