Method
 

Making Whoopie Pies
  1. Reduce apple cider by simmering it in a saucepan for 15-20 minutes until it thickens to 1/4 cup.
  2. Cream together softened butter and brown sugar until fluffy, then add egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  4. Gradually add the dry ingredients and whole milk to the wet mixture, mixing until just combined.
  5. Scoop batter into dollops on lined baking sheets, spacing them 2 inches apart.
  6. Bake at 350°F (175°C) for 10-12 minutes until the tops spring back when touched.
  7. Beat softened butter for buttercream, then gradually add powdered sugar and apple cider reduction until fluffy.
  8. Assemble whoopie pies by spreading buttercream on one cookie and topping with another, then chill for 20 minutes.
