  • 2 tbsp Olive Oil Or avocado oil as a substitute

For the Sauce
  • 1 whole Lemon Zest and juice
  • 2 tbsp Fresh Dill Or parsley/tarragon as substitutes
  • 1 tbsp Dijon Mustard Or yellow mustard for a milder option
  • 2 cloves Garlic Minced, or substitute garlic powder if needed
  • 1 tbsp Honey Maple syrup works for a vegan option

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and place the cod fillets on it.

  4. In a bowl, mix lemon zest, lemon juice, dill, Dijon mustard, garlic, and honey.
  5. Pour the lemon dill sauce over the cod, ensuring it is well-coated.
  6. Bake the cod for 12-15 minutes, until it flakes easily with a fork.
  7. Garnish with extra dill and serve immediately.
