Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a medium-sized baking dish, drizzle olive oil, add halved cherry tomatoes, and season with salt, pepper, and dried oregano.
- Crumble the feta cheese evenly over the seasoned cherry tomatoes.
- Using the back of a spoon, make four small wells within the feta and tomato mixture.
- Crack one egg into each well created in the feta and tomato mixture.
- If desired, sprinkle red pepper flakes over the eggs.
- Place the baking dish in the preheated oven and bake for 15-20 minutes.
- Once baked, garnish with fresh basil or parsley and serve.
