- Preheat your oven to 350°F (175°C) and coat a 9x5-inch loaf pan with baking spray or line it with parchment paper.
- In a medium mixing bowl, whisk together 1¾ cups of all-purpose flour, 1 teaspoon of baking soda, and ¼ teaspoon of salt.
- In a large mixing bowl, combine ⅓ cup of canola oil, ½ cup of granulated sugar, ¼ cup of brown sugar, 2 large eggs, 1 teaspoon of vanilla extract, and 3 large mashed bananas.
- Gently add the flour mixture to the wet ingredients and fold together until just combined.
- Toss 1 cup of blueberries in a little flour and fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for approximately 60 minutes.
- Allow the loaf to cool in the pan for about 20 minutes, then transfer to a wire rack to cool completely.
