Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 9x5-inch loaf pan with baking spray or line it with parchment paper.
  2. In a medium mixing bowl, whisk together 1¾ cups of all-purpose flour, 1 teaspoon of baking soda, and ¼ teaspoon of salt.
  3. In a large mixing bowl, combine ⅓ cup of canola oil, ½ cup of granulated sugar, ¼ cup of brown sugar, 2 large eggs, 1 teaspoon of vanilla extract, and 3 large mashed bananas.
  4. Gently add the flour mixture to the wet ingredients and fold together until just combined.
  5. Toss 1 cup of blueberries in a little flour and fold them into the batter.
  6. Pour the batter into the prepared loaf pan and bake for approximately 60 minutes.
  7. Allow the loaf to cool in the pan for about 20 minutes, then transfer to a wire rack to cool completely.
