  1. Preheat your grill or stovetop grill pan to medium-high heat, about 375°F (190°C). Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Let the grilled chicken rest before slicing it into strips.
  2. Wash and dry the mixed greens, cucumbers, and strawberries. Slice the cucumbers thinly and hull the strawberries. Chop the cherry tomatoes in half. Arrange the ingredients on a large platter or bowl.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, and honey. Season with salt and pepper. Whisk until combined.
  4. Layer the sliced grilled chicken on top of the mixed greens, then scatter the strawberries, cherry tomatoes, cucumbers, and goat cheese on top.
