Step-by-Step Instructions
  1. In a medium bowl, combine shredded chicken and barbecue sauce, mixing thoroughly.
  2. Place a non-stick skillet over medium heat and add 1 tablespoon of butter.
  3. Spread half of the BBQ chicken mixture over one slice of sourdough bread, sprinkle mozzarella cheese, and top with another slice.
  4. Cook the assembled sandwich in the skillet for about 3-4 minutes until golden brown.
  5. Flip the sandwich, add another tablespoon of butter, and cook for an additional 3-4 minutes.
  6. Remove from skillet, let cool for a minute, cut in half, garnish with parsley, and serve.
