Step-by-Step Instructions
  1. Prepare Marinade: In a medium bowl, whisk together soy sauce, pineapple juice, ketchup, dark brown sugar, olive oil, sesame oil, minced garlic, ginger, salt, and black pepper until well combined.
  2. Marinate Chicken: Place the boneless skinless chicken breast in a resealable bag or bowl, then pour half of the marinade over the chicken. Seal and refrigerate for at least 1 hour or overnight.
  3. Prep Vegetables: Wash and cut the bell peppers and red onion into 1.5-inch pieces. Soak wooden skewers in water for 30 minutes.
  4. Assemble Skewers: Remove chicken from the marinade and discard the marinade. Thread the chicken, chunks of pineapple, and vegetables onto skewers in an alternating pattern.
  5. Grill Kabobs: Preheat the grill to medium-high heat. Brush grill grates with olive oil and grill kabobs for about 10 minutes, turning occasionally until the chicken is cooked through.
