Ingredients
  

For the Salmon
  • 1 lb Salmon fresh or frozen
  • 2 tbsp Brown sugar can substitute with coconut sugar or maple syrup
  • 1 tbsp Chili powder regular chili powder recommended
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tbsp Olive oil for spice rub and cooking
For the Salsa
  • 1 medium Mango fresh preferred
  • 1/2 medium Avocado
  • 1/4 small Red onion can use green onions for milder taste
  • 1 tbsp Lime juice freshly squeezed recommended
For Serving
  • 2 cups Rice any variety from brown to jasmine

Method
 

Instructions
  1. Prepare the Spice Mix: In a medium bowl, combine brown sugar, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until the spices are evenly blended. Preheat your broiler to 500°F (260°C).
  2. Season the Salmon: Pat the salmon filet dry with a paper towel, then drizzle a teaspoon of olive oil over it. Rub the spice mix generously over the salmon. Let it sit for a few minutes.
  3. Broil the Salmon: Line a nonstick sheet pan with parchment paper. Place the salmon on the pan and broil for 6-10 minutes until it flakes easily with a fork.
  4. Make the Mango Avocado Salsa: Dice the mango and avocado. Chop the red onion finely and mix with lime juice. Toss until combined.
  5. Serve the Dish: Once the salmon is cooked, prepare rice as needed. Assemble the bowls with rice, salmon, and top with mango avocado salsa.
