Step‑by‑Step Instructions for Beef Enchilada Casserole
  1. Preheat your oven to 350°F (175°C) and spray a 9x13-inch baking dish with cooking spray.
  2. In a skillet over medium heat, sauté diced onions with kosher salt for about 5 minutes. Add chili powder and cumin, then stir in flour and gradually whisk in chicken stock, tomato sauce, and garlic, simmering for 5 minutes.
  3. In a separate skillet, cook the ground beef with diced onion over medium-high heat for about 5 minutes. Mix in green chiles and black beans, adding ½ cup of enchilada sauce.
  4. Spread ½ cup of enchilada sauce on the bottom of the baking dish. Layer 6 corn tortillas, dipping each in remaining sauce.
