Step‑by‑Step Instructions for Beef Enchilada Casserole
- Preheat your oven to 350°F (175°C) and spray a 9x13-inch baking dish with cooking spray.
- In a skillet over medium heat, sauté diced onions with kosher salt for about 5 minutes. Add chili powder and cumin, then stir in flour and gradually whisk in chicken stock, tomato sauce, and garlic, simmering for 5 minutes.
- In a separate skillet, cook the ground beef with diced onion over medium-high heat for about 5 minutes. Mix in green chiles and black beans, adding ½ cup of enchilada sauce.
- Spread ½ cup of enchilada sauce on the bottom of the baking dish. Layer 6 corn tortillas, dipping each in remaining sauce.
- Layer half of the beef mixture over the tortillas and sprinkle with 1 cup of cheese. Add remaining tortillas, beef mixture, and 2 cups of cheese on top.
- Bake uncovered for about 20 minutes until cheese is bubbly and golden. Let it rest for about 10 minutes before serving.
