  • 1 pound Ground Beef can substitute with ground turkey or chicken
  • 1 packet Taco Seasoning use McCormick for balanced flavor
  • 8 ounces Rotini Pasta cook al dente and rinse with cold water
  • 1 whole Jalapeño adjust based on spice preference
  • 2 whole Roma Tomatoes diced for mixing
  • 1 can Corn drain well before adding
  • 1 whole Red Bell Pepper diced uniformly
  • 1 whole Yellow Onion diced uniformly
  • 1 cup Cheddar Cheese shredded for better blending
  • 1 can Black Beans rinse and drain before using
  • 1 cup Catalina Dressing Kraft classic is recommended
  • 1 bag Nacho Doritos crushed just before serving
  • 1 head Iceberg Lettuce added right before serving

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil and cook the rotini according to package directions until al dente, then drain and rinse with cold water.
  2. Dice the jalapeño and Roma tomatoes, and chop the red bell pepper and yellow onion into uniform pieces. Shred the cheddar cheese.
  3. In a skillet over medium-high heat, cook the ground beef for about 8-10 minutes, stirring until browned. Drain excess fat and stir in the taco seasoning.
  4. In a mixing bowl, combine the cooled pasta, seasoned beef, diced vegetables, drained corn, black beans, and shredded cheese.
  5. Pour the Catalina dressing over the salad and toss until all ingredients are evenly coated.
  6. Crush the Nacho Doritos and sprinkle over the salad just before serving. Mix gently and serve over chopped iceberg lettuce.

Notes
