Prepare the Pie

Firmly press the mixture into the bottom of a 9-inch pie dish to form an even crust. Chill the crust in the refrigerator for about 15 minutes to set.
  2. In a mixing bowl, mash or blend 2 cups of fresh blueberries until smooth. Add 3-4 tablespoons of chia seeds, 1/4 to 1/2 cup of your chosen sweetener, 2 tablespoons of lemon juice, and a pinch of salt. Mix everything well, letting it sit for 5-10 minutes.
  3. Once the chia mixture has thickened slightly, fold in 1 cup of Greek yogurt or cream cheese until fully blended and creamy.
  4. Pour the blueberry chia filling over the chilled crust, smoothing out the top with a spatula. Refrigerate the assembled pie for at least 2 hours, preferably overnight.
  5. Top with fresh blueberries, lemon zest, or mint leaves before serving. Slice using a hot, sharp knife for clean edges.
