  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced
  • 1 cup Green Bell Pepper Diced
  • 1 cup Red Bell Pepper Diced
  • 1 medium Red Onion Finely chopped
  • 1/2 cup Black Olives Sliced (optional)
  • 1 cup Italian Dressing Store-bought or homemade
  • 1/2 cup Parmesan Cheese Grated (optional)

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Cook spaghetti according to package instructions, approximately 8-10 minutes, until al dente.
  2. Once cooked, drain spaghetti and rinse under cold water to cool it down and stop further cooking.
  3. Prepare veggies: halve cherry tomatoes, dice cucumber and bell peppers, finely chop red onion.
  4. In a large mixing bowl, combine the cooled spaghetti and all prepared vegetables. Toss gently.
  5. Pour Italian dressing over the salad and toss everything until well-coated.
  6. Season with salt and black pepper to taste. If desired, mix in grated Parmesan cheese.
  7. Cover the salad and refrigerate for at least one hour to enhance flavors.
