For the Soup
  • 1.5 cups Red Lentils Rinsed and drained.
  • 6 cups Vegetable Broth or Water For a non-vegan option, use chicken broth.
  • 1 can (14.5 oz) Diced Tomatoes Fresh tomatoes can be used instead.
  • 2 Carrots Diced; can swap for similar root vegetabls.
For Seasoning
  • 1 teaspoon Salt Adjust to taste.
  • 0.5 teaspoon Black Pepper Adjust to taste; fresh recommended.
  • 1 tablespoon Lemon Juice Lime juice is a good substitute.
For Garnish
  • Fresh Parsley or Cilantro For garnish, optional.

Method
 

Main Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced onions with a pinch of salt, cooking for 15-20 minutes until caramelized.
  3. Stir in minced garlic, ground cumin, and smoked paprika, cooking for 1-2 minutes.
  4. Add diced carrots and cook for about 5 minutes.
  5. Combine the lentils, vegetable broth, and diced tomatoes in the pot.
  6. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  7. Blend to desired consistency using an immersion blender.
  8. Stir in salt, black pepper, and lemon juice to taste. Serve hot, garnished with parsley or cilantro.
