  • 1 tbsp Sugar Can replace with honey or maple syrup.
  • 1 tbsp Chili Crisp Sriracha can be used for more heat.

Method
 

Step-by-Step Instructions
  1. Season the chicken breast with kosher salt and freshly ground black pepper on both sides. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken for about 4-5 minutes per side, or until golden brown and cooked through. Let rest and slice into thin strips.
  2. In a medium bowl, combine lime zest, lime juice, rice vinegar, light soy sauce, sesame oil, minced garlic, sugar, and chili crisp. Whisk until well mixed.
  3. Boil a small pot of water. Blanch shelled edamame beans for 1-2 minutes until bright green and tender. Strain and rinse with cold water.
  4. In the bowl with the dressing, add shredded carrots, sliced green onions, blanched edamame, toasted sesame seeds, and chopped cilantro. Add sliced chicken and gently toss until well coated.
  5. Serve immediately or chill for 30 minutes for enhanced flavors. Optionally, top with extra chili crisp, crushed peanuts, or crunchy noodles.
