- Season the chicken breast with kosher salt and freshly ground black pepper on both sides. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken for about 4-5 minutes per side, or until golden brown and cooked through. Let rest and slice into thin strips.
- In a medium bowl, combine lime zest, lime juice, rice vinegar, light soy sauce, sesame oil, minced garlic, sugar, and chili crisp. Whisk until well mixed.
- Boil a small pot of water. Blanch shelled edamame beans for 1-2 minutes until bright green and tender. Strain and rinse with cold water.
- In the bowl with the dressing, add shredded carrots, sliced green onions, blanched edamame, toasted sesame seeds, and chopped cilantro. Add sliced chicken and gently toss until well coated.
- Serve immediately or chill for 30 minutes for enhanced flavors. Optionally, top with extra chili crisp, crushed peanuts, or crunchy noodles.
