Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, brown sugar, granulated sugar, and softened unsalted butter. Mix until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry mixture into the banana batter, stirring gently until just combined.
  6. In another bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and egg yolk until smooth.
  7. Pour half of the banana batter into the prepared loaf pan, add the cheesecake filling, then top with remaining banana batter.
  8. Bake for 55-60 minutes, or until a toothpick comes out clean with a few moist crumbs.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.
