Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and prepare your workspace.
  2. Wash and finely chop your choice of vegetables such as broccoli, kale, and mushrooms.
  3. In a large mixing bowl, combine the chopped vegetables, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until fully incorporated.
  4. Roll out the puff pastry into a rectangle, then cut into 4x6 inch rectangles.
  5. Take a spoonful of the veggie filling and place it at one end of each pastry rectangle. Roll the pastry over the filling, tucking in the sides as you go.
  6. Place the filled rolls on a lined baking sheet, brush the tops with beaten egg for a golden finish.
  7. Bake the rolls for about 25 minutes until golden brown and crispy.
  8. Let them cool for a few minutes before serving warm alongside marinara sauce or a fresh salad.
