- In a mixing bowl, combine your shredded chicken, mayonnaise, Dijon mustard, salt, and pepper. Mix until well-coated.
- Lay one slice of garlic bread on a cutting board. Spread the chicken mixture over it. Layer on shredded mozzarella cheese and grated Parmesan.
- Heat a non-stick skillet over medium heat and add the assembled sandwich. Grill for 4-5 minutes until golden brown, then flip and grill the other side.
- Remove from skillet, let cool for a minute, then cut in half diagonally to serve.
