  • 1 cup Granulated Sugar
  • 2 tbl Baking Powder
  • 1 tsp Salt
  • 1/2 cup Butter Melted; can use coconut oil for dairy-free.
  • 1 cup Milk Can use almond or oat milk for dairy-free.
  • 2 large Eggs Room temperature.
  • 1 tsp Vanilla Extract
  • 2 cups Cherries Fresh or frozen.
  • 1 tsp Cinnamon Optional.
For the Topping
  • 1/2 cup Brown Sugar
  • 1/2 cup Flour
  • 1/4 cup Butter Cold.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and gently stir. Fold in cherries.
  5. In a small bowl, combine topping ingredients and cut in cold butter until crumbly.
  6. Fill muffin cups with batter and sprinkle streusel topping on each.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Allow muffins to cool for 5 minutes in the pan before transferring to a wire rack.
