Step-by-Step Instructions
  1. Prepare the Chicken by cooking your protein choice. If using rotisserie chicken, shred the meat. For homemade, place chicken breasts in an Instant Pot with water, salt, and pepper. Cook on high pressure for about 12 minutes, then shred and set aside.
  2. Chop the vegetables by slicing the cabbage thinly and grating the carrots. Chop fresh cilantro and green onions.
  3. Make the Peanut Dressing by whisking together peanut butter, lime juice, soy sauce, and chopped chili pepper in a mixing bowl until creamy.
  4. Combine Ingredients in a large mixing bowl with shredded chicken, chopped cabbage, grated carrots, cilantro, and green onions. Pour the peanut dressing over the salad and toss gently.
