Ingredients

For the Chicken
  • 1 lb boneless, skinless chicken breasts The star of the dish, easily substituted with turkey for a twist.
  • 1 teaspoon garlic powder Adds depth of flavor; opt for fresh garlic cloves for a more robust taste.
  • 1 teaspoon onion powder Elevates the flavor profile; fresh sautéed onions work beautifully too.
  • 1 teaspoon paprika Introduces smokiness and warmth; smoked paprika can add extra depth.
  • Salt and pepper to taste
For Cooking
  • 2 tablespoons olive oil Great for searing chicken; any neutral oil can work in its place.
For the Base and Toppings
  • 4 cups mashed potatoes A creamy foundation; store-bought or homemade will do just fine.
  • 1 cup corn kernels Offers a sweet crunch; both canned and frozen are excellent choices.
  • 1 cup shredded cheddar cheese Melts wonderfully, adding richness; try pepper jack for a spicy kick.
  • 1 cup prepared gravy Ties all the elements together; chicken or brown gravy is ideal.
  • Chopped fresh parsley (optional) A sprinkle for vibrant color and freshness.

Equipment

  • large skillet
  • medium bowl
  • medium saucepan
  • microwave

Method

Cooking Instructions
  1. In a medium bowl, combine chicken breasts with garlic powder, onion powder, paprika, salt, and pepper. Mix well until coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 7–9 minutes until golden brown and cooked through.
  3. In a medium saucepan, warm gravy over low heat, stirring occasionally until heated through and smooth, about 3–5 minutes.
  4. Add corn to the skillet or warm in the microwave if using frozen. This adds a sweet crunch.
  5. Reheat mashed potatoes in the microwave or stovetop until hot and creamy, about 4–5 minutes.
  6. In serving bowls, scoop a portion of mashed potatoes, layer corn, and add cooked chicken. Drizzle warm gravy on top.
  7. Sprinkle cheddar cheese over while gravy is hot to allow melting. Garnish with parsley if desired.
