- In a medium bowl, combine chicken breasts with garlic powder, onion powder, paprika, salt, and pepper. Mix well until coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 7–9 minutes until golden brown and cooked through.
- In a medium saucepan, warm gravy over low heat, stirring occasionally until heated through and smooth, about 3–5 minutes.
- Add corn to the skillet or warm in the microwave if using frozen. This adds a sweet crunch.
- Reheat mashed potatoes in the microwave or stovetop until hot and creamy, about 4–5 minutes.
- In serving bowls, scoop a portion of mashed potatoes, layer corn, and add cooked chicken. Drizzle warm gravy on top.
- Sprinkle cheddar cheese over while gravy is hot to allow melting. Garnish with parsley if desired.
