Ingredients

For the Broth
  • 4 cups Low-Sodium Chicken Broth Substitution: Use vegetable broth for a vegetarian option.
  • ¼ teaspoon Tamari Soy Sauce Substitution: Coconut aminos can work if you’re avoiding soy.
  • ½ teaspoon Toasted Sesame Oil Note: Regular sesame oil can be used, but the flavor won't be the same.
For Thickening
  • 2 tablespoons Cornstarch Tip: Be careful not to double without measuring, or it might become too thick!
For Flavor
  • 1 teaspoon Ground Ginger Substitution: Fresh ginger can offer a bolder taste.
  • ¼ teaspoon Ground Turmeric Optional—skip if you're not a fan.
  • pinch White Pepper Brings a gentle heat.
  • ½ teaspoon Kosher Salt Adjust according to your taste preferences.
For the Main Ingredients
  • 3 large Eggs Lightly beaten, essential for silky ribbons.
For Garnish
  • 1 Green Onion Sliced, adds a fresh crunch.

Equipment

  • medium saucepan
  • measuring cup
  • whisk

Method

Step-by-Step Instructions
  1. In a measuring cup, combine ¼ cup of low-sodium chicken broth with 2 tablespoons of cornstarch. Whisk until smooth, fully dissolving the cornstarch.
  2. In a medium saucepan, pour in 3 ¾ cups of the remaining chicken broth and place it over medium heat. Bring to a gentle simmer, about 3-4 minutes.
  3. Gradually pour the cornstarch slurry into the simmering broth while continuously stirring.
  4. Lower the heat to a gentle simmer. Stir the soup in a circular motion and slowly stream in the lightly beaten eggs to create ribbons.
