  • 1 cup Uncooked Rice Basmati or jasmine adds a fragrant note.
  • 1 cup Carrots Can substitute with peas or bell peppers, sliced.
  • 2 cups Chicken Broth Vegetable broth works for a vegetarian option.
  • 1 teaspoon Dried Thyme Italian seasoning can be used if out of thyme.
  • 1 small Onion Finely chopped; any onion variety works.
  • 2 cloves Garlic Minced; garlic powder is a substitute.
  • Salt to taste Salt Essential for seasoning.
  • Salt to taste Pepper Essential for seasoning.
  • 1/2 cup Unsweetened Almond Milk Other non-dairy milks can be substituted.
  • Fresh Parsley Chopped; swap for basil for a different flavor profile.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat for 1-2 minutes.
  2. Add the diced chicken, sear for 5-6 minutes until golden brown, stirring occasionally.
  3. Mix in 1 finely chopped onion and sauté for 2-3 minutes, then add 2 minced garlic cloves for 30 seconds.
  4. Stir in 1 cup of uncooked rice and 1 cup of sliced carrots, then pour in 2 cups of chicken broth.
  5. Add 1 teaspoon of dried thyme, salt, and pepper to taste. Cover and simmer on low for 18-20 minutes.
  6. Pour in 1/2 cup of unsweetened almond milk, stir, and simmer uncovered for another 3-4 minutes.
  7. Taste and adjust seasoning if needed, then sprinkle with fresh chopped parsley before serving.
