- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it lightly or lining it with parchment paper.
- In a medium bowl, whisk together melted unsalted butter and light brown sugar until smooth and glossy. Add in the egg, honey, and vanilla extract, whisking until well combined.
- Carefully stir in flour, salt, and ground cinnamon until just combined, avoiding overmixing.
- Pour the batter into your prepared baking pan, spreading it evenly. In a small bowl, mix granulated sugar with the remaining ground cinnamon, and sprinkle it over the batter.
- Bake in the preheated oven for 22–25 minutes, or until a toothpick comes out clean.
- Allow the blondies to cool completely in the pan for about 20–30 minutes before slicing into squares.
