- Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and reserve 1 cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking for about 5 minutes until translucent.
- Increase heat to medium-high, add ground beef, breaking it apart, and cook until browned, about 7 minutes. Season with salt, pepper, and Italian seasoning.
- Reduce heat to medium, pour in heavy cream, stirring to combine. Gradually add reserved pasta water until desired consistency is reached. Stir in Parmesan cheese until melted.
- Add drained pasta to skillet and toss to coat in sauce. Adjust consistency with additional pasta water if desired.
- Serve immediately, garnished with additional Parmesan cheese or fresh parsley.
