Ingredients

Pasta
  • 1 package Cheese Tortellini Fresh or refrigerated tortellini provides the best texture.
Beef
  • 1 pound Ground Beef Adds richness; substitute with ground turkey for a lighter dish.
  • 1 tablespoon Olive Oil Essential for sautéing beef and preventing sticking.
Sauce
  • 2 tablespoons Unsalted Butter Creates the base flavor; always use unsalted for better control of seasoning.
  • 1 teaspoon Garlic Powder A quick flavor boost; fresh garlic can provide a punchier taste.
  • 1 tablespoon Italian Seasoning Adds depth to the sauce; adjust to your flavor preference.
  • 1 teaspoon Salt Essential for seasoning; taste at various stages of cooking.
  • 1 teaspoon Pepper Essential for seasoning; taste at various stages of cooking.
  • 1 medium Onion Finely diced; provides sweetness; yellow or white onion both work well.
  • 2 cloves Garlic Minced; freshly minced invites aromatic notes; don’t overcook to avoid bitterness.
  • 2 tablespoons All-Purpose Flour Thicken the sauce for creaminess; cook long enough to eliminate raw flour taste.
  • 1 cup Beef Broth A flavorful base for the sauce; vegetable broth is a great alternative for lighter sauce.
  • 1 cup Heavy Cream Gives your sauce its luxurious consistency; swap with half-and-half for a lighter option.
  • 4 ounces Cream Cheese Cubed; additional creaminess; opt for full-fat varieties for the best results.
  • 1 cup Shredded Cheddar Cheese Provides the primary cheesy flavor; shredding your own enhances melting quality.
  • 1/2 cup Grated Parmesan Cheese Adds nutty flavor; use fresh for an optimal taste.
Garnish
  • 2 tablespoons Chopped Parsley Optional; freshens up the dish's appearance and flavor.

Method

Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Add the cheese tortellini and cook according to package instructions, typically around 3-5 minutes, until al dente. Once cooked, drain the tortellini and drizzle a little olive oil to prevent sticking. Set them aside while you prepare the sauce.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef, breaking it apart with a spatula, and season generously with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the beef is browned and no longer pink. Once cooked, transfer the beef to a plate and set aside.
  3. Lower the heat to medium and add 2 tablespoons of unsalted butter to the same skillet. Once melted, introduce the finely diced onion and sauté for about 3 minutes, or until translucent. Next, stir in the minced garlic and continue to sauté for another minute, just until fragrant.
  4. Sprinkle 2 tablespoons of all-purpose flour over the sautéed onions and garlic, stirring for about a minute to cook off the raw flour taste. Gradually whisk in 1 cup of beef broth and 1 cup of heavy cream, ensuring no lumps remain. Increase the heat until the mixture begins to bubble gently, thickening into a creamy sauce.
  5. Reduce the heat to low and add in the cubed cream cheese, stirring continuously until it melts smoothly into the sauce. Follow this by adding 1 cup of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese, stirring well until all the cheeses are fully melted and the sauce is rich and creamy.
  6. Return the browned beef to the skillet, folding it gently into the creamy cheese sauce. Add the cooked cheese tortellini, mixing everything together until the tortellini is well-coated and warmed through, about 2-3 minutes.
  7. Once everything is heated thoroughly and the dish is steaming, plate your Creamy Beef Tortellini Delight generously. For an added touch of freshness, sprinkle with chopped parsley as a vibrant garnish. Serve immediately.
