- Fill a large pot with salted water, bring it to a boil, add noodles and cook for 8–10 minutes.
- While noodles are cooking, melt unsalted butter in a medium saucepan over medium heat.
- Once butter is melted, stir in miso paste and soy sauce, simmer for 2–3 minutes.
- Drain cooked noodles, reserve 1/4 cup pasta water, then add noodles to the sauce and toss to coat.
- If dry, add reserved pasta water gradually to achieve desired consistency, then add sesame oil.
- Serve warm, garnished with sliced green onions and optional sesame oil or seeds.
