  • 8 oz Noodles Gluten-free noodles can be used.
  • 1 tbsp Salt Use to taste in the boiling water.
For the Sauce
  • 4 tbsp Unsalted Butter Substitute with vegan butter for a dairy-free option.
  • 2 tbsp Miso Paste Red or white miso works well.
  • 2 tbsp Soy Sauce Use tamari for a gluten-free option.
  • 1 tbsp Sesame Oil Omit if allergic to nuts.
For the Garnish
  • 2 tbsp Green Onion Optional; can substitute with cilantro or basil.

Method
 

Step-by-Step Instructions
  1. Fill a large pot with salted water, bring it to a boil, add noodles and cook for 8–10 minutes.
  2. While noodles are cooking, melt unsalted butter in a medium saucepan over medium heat.
  3. Once butter is melted, stir in miso paste and soy sauce, simmer for 2–3 minutes.
  4. Drain cooked noodles, reserve 1/4 cup pasta water, then add noodles to the sauce and toss to coat.
  5. If dry, add reserved pasta water gradually to achieve desired consistency, then add sesame oil.
  6. Serve warm, garnished with sliced green onions and optional sesame oil or seeds.
