- Season the chicken breasts with salt, pepper, and Cajun seasoning. Heat oil in a skillet and sear chicken for 6-7 minutes per side until golden brown. Remove and rest before slicing.
- Boil salted water in a large pot, add pasta, and cook until al dente (8-10 minutes). Reserve 1 cup of pasta water, then drain.
- Melt butter in the same skillet, sauté minced garlic for 1 minute, then add Cajun seasoning and smoked paprika. Stir in heavy cream and chicken broth, simmer for 4-5 minutes until thickened.
- Combine cooked pasta with the sauce, adding reserved pasta water for consistency. Fold in sliced chicken and garnish with parsley and Parmesan before serving.
