  • 1 cup Whole Milk Almond milk can be used for a lighter option
  • 1 cup Chicken Broth Can substitute with vegetable broth
  • 4 ounces Cream Cheese Mascarpone is a good alternative
  • 1 cup Mozzarella Cheese Shredded
  • ½ cup Parmesan Cheese Grated
  • to taste Salt and Pepper Essential for flavor

Method
 

Cooking Steps
  1. Season the chicken breasts with Cajun seasoning and smoked paprika, allowing to rest for 10 minutes.
  2. Cook spaghetti according to package directions until al dente, then drain and set aside.
  3. Sear the seasoned chicken in olive oil for 6-8 minutes per side until cooked through; remove and rest.
  4. In the same skillet, melt butter and sauté garlic, then whisk in flour to create a roux.
  5. Gradually stir in milk and chicken broth, simmer until thickened, about 3-4 minutes.
  6. Stir in cream cheese, mozzarella, and Parmesan until melted and creamy.
  7. Combine the cooked spaghetti and sliced chicken with the sauce, tossing to coat.
  8. Transfer to a baking dish, top with mozzarella, and broil for 2-3 minutes until bubbly.
  9. Garnish with parsley or red pepper flakes and serve immediately.
