- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle it with olive oil, then wrap it tightly in aluminum foil. Roast for 30-35 minutes, until the cloves are soft and golden brown. Allow the garlic to cool slightly, then squeeze the sweet, caramelized cloves into a bowl.
- In a medium skillet over medium heat, pour in 2 tablespoons of olive oil. Add the chopped spinach and sauté for about 2-3 minutes, stirring occasionally, until just wilted. Season with salt and pepper.
- In the bowl with the roasted garlic, mash the cloves until smooth. Mix in ricotta cheese, half of the shredded mozzarella, oregano, and sprinkle with salt and pepper. Stir until well blended and creamy.
- Spread the garlic-ricotta mixture evenly over the pre-made pizza crust, leaving a small border for the crust. Layer the sautéed spinach on top, then sprinkle the remaining mozzarella and crumbled feta evenly across.
- Place the assembled pizza in the preheated oven and bake for 15-20 minutes. Watch for the crust to turn golden brown and the cheeses to begin bubbling.
- Remove the pizza from the oven, let it cool for a few minutes, and garnish with fresh basil leaves before slicing.
