Ingredients
  

Tzatziki Sauce
  • 1 cup Plain Greek Yogurt
  • 1 Cucumber, grated finely grated and squeezed dry
  • 2 Garlic cloves, minced
  • 2 tablespoons Fresh Dill or fresh mint/parsley for substitutes
  • 1/2 whole Lemon, juiced
  • Salt to taste
  • Black Pepper to taste
Wraps
  • 2 pieces Chicken Breasts or chicken thighs for deeper flavor
  • 4 pieces Whole Wheat Wraps or gluten-free wraps/lettuce leaves
  • 2 cups Mixed Greens
  • 1 cup Cherry Tomatoes, halved
  • 1 whole Red Onion, sliced

Method
 

Prepare Tzatziki Sauce
  1. Combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper in a medium bowl. Mix until smooth and creamy. Cover and refrigerate for at least 30 minutes.
Grill Chicken
  1. Preheat grill to medium-high heat. Season chicken with salt and pepper. Grill for 6-8 minutes per side or until internal temperature reaches 165°F. Remove, let rest, and slice.
Assemble Wraps
  1. Lay a whole wheat wrap on a surface. Spread tzatziki sauce, then add sliced chicken, mixed greens, cherry tomatoes, and red onion.
Roll Wraps
  1. Fold in the sides of the wrap and roll tightly from the bottom to encase the fillings.
Meal Prep
