For the Chicken
  • 1 pound skinless boneless chicken thighs or breasts
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon garlic powder or fresh minced garlic
  • 1 tablespoon curry powder adjust for more heat
  • 1/2 cup Greek yogurt can substitute sour cream
For the Sauce
  • 2 tablespoons vegetable oil or ghee for traditional touch
  • 2 cloves minced garlic fresh preferred
  • 1 medium diced onion fresh preferred
  • 1 cup tomato sauce
  • 2 tablespoons unsalted butter to enrich sauce
  • 1 teaspoon sugar can be omitted
  • 1/2 teaspoon black pepper freshly ground works best
  • 1/2 cup heavy cream or coconut cream for lighter version
  • 1/4 teaspoon cayenne pepper optional
  • 1 teaspoon sweet paprika or smoked paprika for a twist
  • 1 teaspoon garam masala store-bought or homemade

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine chicken pieces with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Cover and refrigerate for at least 15 minutes.
  2. Heat a large skillet over medium heat, add vegetable oil and butter. Once melted, add garlic and onion, and sauté for 3-4 minutes until translucent.
  3. Pour in the tomato sauce, sugar, black pepper, heavy cream, cayenne pepper (if using), and garam masala. Simmer for 5 minutes.
  4. In a separate pan, heat a touch of oil and sauté marinated chicken for 6-8 minutes until cooked through.
  5. Transfer the chicken to the simmering sauce, add remaining butter, and simmer for another 3-5 minutes.
  6. Garnish with parsley if desired and serve hot with naan or basmati rice.
