  1. Prepare Pasta Water: Bring a large pot of water to a boil and generously salt it until it tastes like the sea.
  2. Cook Pasta: Add spaghetti or bucatini to boiling water and cook until al dente, about 8–10 minutes. Reserve one cup of starchy pasta water before draining.
  3. Crisp Meat: Heat a skillet over medium heat, add diced pancetta, and cook until crispy, about 5–7 minutes. Add smashed garlic cloves for flavor and discard after browning.
  4. Mix Egg and Cheese: Whisk together whole eggs, egg yolks, grated Pecorino Romano, Parmesan cheese, and black pepper in a bowl until thick and creamy.
  5. Combine Pasta and Meat: Transfer drained pasta into the skillet with pancetta and toss in the bacon fat. Turn off the heat.
  6. Add Egg Sauce: Pour the egg and cheese mixture over the hot pasta, tossing vigorously to create a silky sauce.
