Step-by-Step Instructions
  1. Place thawed boneless, skinless chicken breasts in the slow cooker.
  2. Drain and rinse the black beans and corn, then add them with the Rotel tomatoes.
  3. Sprinkle onion powder, ranch dressing packet, and ground black pepper over the mixture.
  4. Squeeze lime juice and pour chicken broth into the slow cooker.
  5. Place cream cheese on top of the mixture without mixing it in.
  6. Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours.
  7. Carefully shred the chicken after cooking, and return it to the slow cooker.
  8. Stir the mixture until cream cheese is well incorporated.
  9. Serve over rice, in tacos, or on nachos.
