- In a large skillet, melt 2 tablespoons of unsalted butter over medium-low heat. Add 2 large sliced yellow onions along with ½ teaspoon salt and ¼ teaspoon black pepper. Stir occasionally for about 30–40 minutes, until the onions become deeply golden brown and caramelized.
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine 8 ounces of shredded smoked Gouda cheese, 4 ounces of softened cream cheese, ½ cup of sour cream, ¼ cup of mayonnaise, and 1 clove of minced garlic. Blend until smooth and creamy.
- Gently fold the caramelized onions into the creamy cheese mixture and transfer to an 8x8 inch baking dish.
- Place the baking dish in your preheated oven and bake for 20–25 minutes until bubbly and golden.
- Remove from the oven and sprinkle with 1 tablespoon of chopped chives. Serve warm.
