Step-by-Step Instructions
  1. In a large skillet, melt 2 tablespoons of unsalted butter over medium-low heat. Add 2 large sliced yellow onions along with ½ teaspoon salt and ¼ teaspoon black pepper. Stir occasionally for about 30–40 minutes, until the onions become deeply golden brown and caramelized.
  2. Preheat your oven to 375°F (190°C).
  3. In a large mixing bowl, combine 8 ounces of shredded smoked Gouda cheese, 4 ounces of softened cream cheese, ½ cup of sour cream, ¼ cup of mayonnaise, and 1 clove of minced garlic. Blend until smooth and creamy.
  4. Gently fold the caramelized onions into the creamy cheese mixture and transfer to an 8x8 inch baking dish.
  5. Place the baking dish in your preheated oven and bake for 20–25 minutes until bubbly and golden.
  6. Remove from the oven and sprinkle with 1 tablespoon of chopped chives. Serve warm.
