Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds. Microwave for about 10-12 minutes or roast in the oven for 30-40 minutes until tender.
  3. In a skillet over medium heat, melt the butter. Add onions, red pepper flakes, and garlic powder. Cook for 5-7 minutes until the onions are soft and golden.
  4. In a mixing bowl, combine the shredded spaghetti squash, sautéed onions, sour cream, and half of the cheese. Mix until well incorporated.
  5. Lightly grease a baking dish with cooking spray or olive oil. Transfer the squash mixture into the prepared dish and spread evenly. Top with remaining cheese.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbling.
  7. For a golden finish, broil for an additional 2-3 minutes if desired.
