  • 4 cups fresh chopped zucchini ensure firm and blemish-free
  • 2 medium russet potatoes diced, can swap with cauliflower
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 2 tablespoons soy sauce or tamari for gluten-free
For the Creamy Texture
  • 0.5 cup heavy cream omit for a lighter version
  • 1 cup shredded cheddar cheese or any meltable cheese
Optional Spice
  • to taste cayenne pepper omit for milder taste

Preparation Steps
  1. In a large Dutch oven, melt butter over medium heat until shimmering. Add diced onion and sauté for 5 minutes until softened.
  2. Add minced garlic to the pot and cook for an additional minute until fragrant.
  3. Sprinkle in dried rosemary, thyme, oregano, and celery salt. Stir in chopped zucchini, cooking for 5 minutes until slightly softened.
  4. Mix diced russet potatoes, chicken broth, and soy sauce into the pot. Bring to a gentle boil, then simmer for 15-20 minutes until fork-tender.
  5. Remove from heat and blend the soup until smooth using an immersion blender.
  6. Return the pot to low heat, stir in heavy cream and shredded cheese until melted.
  7. Ladle into bowls and serve immediately.
