Step‑by‑Step Instructions
  1. Soak Yukon Gold potatoes in a large bowl of cold water for at least 30 minutes, up to 2 hours.
  2. After soaking, drain the potatoes and pat them dry with paper towels.
  3. Slice each potato into ½-inch thick slabs, using chopsticks as a guide to achieve the accordion effect.
  4. Soak the sliced potatoes again in cold water for about 10-30 minutes.
  5. Thoroughly dry each slice with paper towels.
  6. Preheat your oven to 425°F (220°C) and prepare your baking sheet with parchment paper.
  7. Arrange potato slices on the baking sheet in a single layer.
  8. Mix melted butter, paprika, garlic powder, onion powder, salt, and pepper in a small bowl, then brush onto both sides of the potato slices.
  9. Bake for 20 minutes, flip, brush the other side, then bake for an additional 20-25 minutes until golden brown.
  10. Sprinkle flaky salt and parsley over the top before serving.
