For the Coating
  • 1 cup Grated Parmesan Cheese Can substitute with Pecorino for a different flavor.
  • 2 tablespoons Extra Virgin Olive Oil Vegetable oil can be used if preferred.
  • 1 teaspoon Garlic Powder Fresh garlic works too, but may not coat as well.
  • 1 teaspoon Dried Parsley Can skip or use dried oregano.

Cooking Instructions
  1. Wash the red skin potatoes thoroughly, cut into one-inch cubes, and place in a large mixing bowl.
  2. Drizzle extra virgin olive oil over cubed potatoes, add Parmesan cheese, garlic powder, parsley, salt, and pepper. Mix until coated.
  3. Preheat your air fryer to 375°F (190°C), arrange potatoes in single layer in the air fryer basket.
  4. Air fry the potatoes for 30 minutes, tossing halfway through for even cooking.
  5. Carefully remove the potatoes, let cool for a minute, and serve warm.
