- Preheat your oven to 450°F (232°C).
- In a medium skillet, cook ground beef over medium-high heat for about 5-7 minutes, crumbling until no longer pink. Stir in taco seasoning and red enchilada sauce, simmer for 3-4 minutes.
- Wrap tortillas in a damp paper towel and microwave for 30-60 seconds to make pliable.
- Lightly brush one side of each tortilla with olive oil and place oiled side down on a baking sheet lined with parchment paper.
