  • 2 tablespoons Mayonnaise Light mayonnaise for healthier option

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper or olive oil.
  2. In a shallow dish, combine Panko breadcrumbs, Parmesan cheese, and herbs de Provence and mix well.
  3. In a separate bowl, whisk together Dijon mustard and mayonnaise until smooth.
  4. Season the ocean perch fillets with salt and pepper on both sides and lay them skin side down on the baking sheet.
  5. Spread the mustard-mayo mixture over each fillet evenly.
  6. Press the fillets into the breadcrumb mixture to coat and place back on the baking sheet, breadcrumb side up.
  7. Bake for 5-6 minutes in the oven, then switch to broiler for 2-3 minutes until golden.
  8. Serve warm with a squeeze of fresh lemon juice.
