Preparation Steps
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper or olive oil.
- In a shallow dish, combine Panko breadcrumbs, Parmesan cheese, and herbs de Provence and mix well.
- In a separate bowl, whisk together Dijon mustard and mayonnaise until smooth.
- Season the ocean perch fillets with salt and pepper on both sides and lay them skin side down on the baking sheet.
- Spread the mustard-mayo mixture over each fillet evenly.
- Press the fillets into the breadcrumb mixture to coat and place back on the baking sheet, breadcrumb side up.
- Bake for 5-6 minutes in the oven, then switch to broiler for 2-3 minutes until golden.
- Serve warm with a squeeze of fresh lemon juice.
