For the Chicken
  • 1 lb Boneless, Skinless Chicken Breast Cut into small pieces
  • 1/4 cup Cornstarch For coating the chicken
  • 1/4 cup Water For cornstarch slurry
For the Flavor
  • 4 cloves Garlic Minced
  • 2 tbsp Olive Oil/Sesame Oil For frying
  • 3 tbsp Low-Sodium Soy Sauce Essential for flavor
  • 1 tbsp Oyster Sauce Optional, for added flavor
  • to taste Ground Black Pepper For seasoning
For the Veggies
  • 1 cup Frozen Peas and Carrots Thawed before adding
  • 1/4 cup Green Onions Sliced for garnish
For the Eggs
  • 2 large Eggs Lightly beaten

Method
 

Step-by-Step Instructions
  1. Coat the chicken with cornstarch in a mixing bowl and let it sit for 5 minutes.
  2. Heat oil in a skillet and cook the chicken for 5–7 minutes until golden brown.
  3. Sauté minced garlic in the same skillet until golden.
  4. Scramble the beaten eggs in the skillet and then combine with garlic.
  5. Stir in cooked rice, peas and carrots, and green onions; add sauces and stir-fry for 3–5 minutes.
  6. Return the chicken to the skillet and mix to combine all ingredients.
  7. Season with black pepper and serve hot, garnished with green onions.
