Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Wash the Yukon Gold potatoes thoroughly and cut them into 1/3-inch thick sticks.
  3. Soak the cut fries in a large bowl filled with cold water for 10 to 15 minutes.
  4. Drain and dry the fries thoroughly with a clean kitchen towel.
  5. Toss the fries with olive oil, salt, oregano, dill, black pepper, and garlic powder.
  6. Line your baking sheet with parchment paper and spread the seasoned fries in a single layer.
  7. Bake the fries for 15 minutes, then flip them using tongs and bake for an additional 6 to 8 minutes.
  8. Remove from the oven and sprinkle with parsley, red onion, and feta cheese.
  9. Serve warm with optional dipping sauces.
