- In a large mixing bowl, combine cold mashed potatoes, shredded cheddar cheese, eggs, all-purpose flour, and seasonings. Mix until just combined.
- Scoop about a tablespoon of the mixture and roll it into a ball. Roll each ball in breadcrumbs to coat completely.
- Line a baking sheet with parchment paper and space the coated puffs on it. Preheat oven to 400°F (200°C).
- Bake for 20-25 minutes, or until golden brown and crispy. Keep an eye on them towards the end of baking.
- Remove from oven and let cool slightly on the baking sheet before serving warm.
