Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Open and drain the chickpeas in a colander. Rinse thoroughly with cold water and pat dry.
  3. Spread the dried chickpeas in an even layer on the baking sheet and let sit for 5 to 10 minutes.
  4. In a mixing bowl, combine chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper.
  5. Drizzle the oil over the chickpeas and toss to coat.
  6. Sprinkle the mixed seasoning over the chickpeas and toss until evenly coated.
  7. Roast in the oven for 25 to 30 minutes, shaking the pan every 10 minutes for even cooking.
  8. Remove from the oven and cool on the baking sheet for 5 to 10 minutes before serving.
