Step-By-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash the Yukon Gold potatoes thoroughly, leaving the skins on, and cut them into ½ inch pieces.
  3. Drizzle with olive oil, salt, and pepper; toss to coat evenly.
  4. Spread the potatoes on a parchment-lined baking sheet in a single layer.
  5. Dot with butter pieces across the potatoes.
  6. Bake in the oven for 25–30 minutes until golden brown.
  7. Flip the potatoes with a spatula and continue roasting for an additional 15–20 minutes.
  8. Once golden brown, remove and sprinkle with kosher salt and garnish with parsley if desired.
