Preparation
  1. Begin by peeling and deveining the fresh raw shrimp, then chop them finely into small pieces, roughly ½ inch in size. Set the chopped shrimp aside in a bowl.
  2. In a mixing bowl, combine the prepared shrimp with breadcrumbs, a beaten egg, chopped green onions, lemon juice, lemon zest, minced garlic, salt, and pepper. Stir gently until just combined.
  3. Using your hands, shape the mixture into patties about one inch thick and place them on a lined baking sheet. Chill the patties in the refrigerator for at least 30 minutes.
  4. Heat olive oil in a skillet over medium heat. Add the chilled shrimp patties, cooking them for about 4 minutes on each side until golden brown and crispy.
  5. In a small bowl, whisk together mayonnaise (or Greek yogurt), minced garlic, and lemon juice. Season with salt and pepper to taste.
  6. Plate the crispy shrimp cakes, drizzling the lemon aioli over them or serving it on the side for dipping.
