Method
 

Step-by-Step Instructions
  1. Begin by placing your beef strips in a mixing bowl and coating them evenly with cornflour.
  2. Heat a generous amount of vegetable oil in a wok or large pan over medium-high heat until shimmering.
  3. Fry the beef strips in batches for 3-4 minutes until they turn golden-brown and crispy. Drain on paper towels.
  4. Reduce the oil in the pan, leaving about 2 tablespoons, and sauté the white parts of spring onions, minced garlic, ginger, and chopped red chili for about 1 minute.
  5. Pour in soy sauce, sweet chili sauce, honey, rice vinegar, and sesame oil into the pan, and stir together. Simmer for 2 minutes.
  6. Return the crispy beef to the pan and toss in the sauce for even coating, heating through.
  7. Garnish generously with green parts of spring onions, fresh coriander, and sesame seeds before serving.
